Why we exist

Glendale has one of the largest Armenian communities outside Armenia, and shawarma here isn't a trend — it's a standard. Plenty of places can hand you a wrap at lunch. Our bar was higher: the same fresh-carved quality at 1 AM that you'd get at 1 PM, every single night of the week.

That's why the spit at 625 E Colorado St turns for fifteen hours a day. We stack it fresh each morning, chicken and beef layered by hand, and we don't carve a single ribbon until someone orders. No heat lamps, no pre-cut trays sitting around, no shortcuts.

What we're known for

The garlic sauce, honestly. Our toum gets whipped in-house daily — garlic, oil, lemon, salt, and patience — and people order extra tubs to take home like it's a controlled substance. After that, it's the late hours: when the bars and shows let out, the line at Patar is the after-party.

Everything around the meat gets the same attention: warm lavash, crunchy pickled turnips and cucumbers, hummus made from scratch, falafel fried to order. It's a short menu on purpose. We'd rather do twelve things right than forty things fine.

Neighborhood first

We're a local shop, not a chain. The same family that stacks the spit takes your catering call, and most of our regulars we know by order before we know their name. Whether you're walking over from the Americana, driving in from Burbank after a shift, or pulling up at midnight with a car full of friends — there's a fresh cut waiting.
